Sunflower + Goji Chocolate Wheels

A little crunchy, a little sweet—these bites are a perfect pantry-powered snack or dessert topper.

Ingredients

  • 70g sunflower seeds
  • Pinch of salt
  • 1 Tbsp maple syrup
  • 1 Tbsp goji berries, finely chopped
  • 20g dark chocolate (for melting or drizzling)

Instructions

  1. Preheat + Prep
    Preheat oven to 180°C (160°C fan) / 350°F. Line a baking sheet with parchment paper.
  2. Mix the Base
    In a bowl, combine sunflower seeds, salt, maple syrup, and chopped goji berries. Stir until well-coated.
  3. Shape
    Spoon the mixture onto the lined sheet into small clusters, or press into a round cookie cutter to form discs. Keep them about ½ inch thick for best texture.
  4. Bake
    Bake for 15–20 minutes, or until golden brown. Let them cool completely—they’ll firm up as they rest.
  5. Add the Chocolate
    Melt the dark chocolate and dip the bottom of each bite, or drizzle it over the top for a more rustic look.

Serving Tip:
Pair with afternoon tea, crumble onto yogurt, or keep a few in a jar for mindful snacking.
